Hungary






When one thinks of Hungary the first thoughts that come to mind are Goulash and Peppers.   Paprika which is available in many forms from smoked, sweet, hot, and then subdivided by type and region also is a Hungarian staple spice.   A while ago I used to have a New Years eve tradition of fondue.  The next day with all the leftover meat from the fondue a big hearty meal of goulash was usually made.

Stuffed Roasted Peppers


This recipe used a rustic and simple filling of ground beef, onions, rice with a touch of paprika and spice.  Roasted and simmered with tomatoes produced an outstanding result.  I keep saying that at times simple is better simply because ingredients have the ability to stand on their own without a confusion of flavours.   This is one of those recipes where the flavours are stacked and each has its own part to play on your tastebuds.




Hungarian Goulash

Comfort food and happiness in a bowl is how I would characterize this dish.  Caraway seeds, marjoram and paprika give this dish a the unique flavour that is characteristic of Hungarian cuisine.  Served over some lovely egg noodles and sour cream.

Home Made Spatzle 

This was fun to do,  I always love a truly new recipe and preparation I have never done before.   Spatzle is simple homemade egg noodles that are smaller in size.  Boiled for a couple minutes and then sautéed in butter.   However the possibilities are endless here,  parsley, basil, some spice here or there can be added to the mix to create a truly unique flavour profile.  I definitely will play with this in the future.   I mixed some of the chicken paprikash sauce with the spatlze and then sautéed it.





Chicken Paprikas 

Good quality paprika, salt and pepper, an onion and some chopped red peppers is all this dish required.   Good quality paprika makes all the difference there is a taste that makes you go wow this is paprika !
Ok so good quality paprika is expensive and paying $10 for a little tin might seem expensive but compared to the regular red coloured sawdust that is commonly known as paprika this was miles ahead.
